Learn the secrets to Texas style brisket from a two time world champion. The class will cover fire management, brisket selection, preparation and slow smoking. Students will enjoy a brisket dinner with sides at the end of the class. Copies of "They Were Smokin" as a reference cookbook/textbook will be available at a discounted price.

June 27th Smokin’ Fish - Cedar Plank Salmon, etc.
July 11th Pork Shoulder – Pulled Pork
August 22nd Exotic – Rabbit/Goat
Sept. 19 Go Wild – Venison/Wild Boar
Each class will end with a dinner including sides and two cold beverages.
